The 12 kg drum roaster has a capacity of 12 kg per batch. The drum roaster has a beautiful design and can be flavored at various points. Such as copper or different colors.
After roasting, the cocoa beans can be poured into the crusher and winnower. This winnower is very nicely open so that the process is very visual. Cheaper solutions are also available. If the cocoa nibs are clean, they go through the pre-grinder. Here the nibs are made finely between 50 and 120 microns. This speeds up the process.
The Rumbo is now up to date. Ready to grind the cocoa nibs. Grinding to less than 20 microns and conching takes approximately 70 hours. Now the chocolate can be poured into molds using the tempering machine!
