THE STORY


Colombia was originally known for its Criollo varieties such as the “Cacao de Montaña” from Santa Marta and
the “Antiguo Real” from San Faustín. These varieties were slowly replaced by modern hybrid varieties.
Nowadays, Colombia is actively seeking to bring cacao to the same legendary levels as its coffee. The different
cacao federations and the government have been supporting efforts to plot genetic varieties in the country, to
improve genetic stocks and to further develop fermentation and drying techniques in areas where it is needed.
These beans were produced by farmer members of Guardabosques de la Sierra in the rural area of Santa Marta
city in the department of Magdalena. Guardabosques de la Sierra, founded in 2010, is an association of 130
families commited to ecological agriculture systems sustainable agritourism.
The farmers own about 200 hectares of land where they cultivate cacao trees, timber, coffee and fruit trees
under an agroforestry system. On average, each farmer owns a plot of 2,5 hectares and produce about 50 tons
per year.

 

GENETICS
Farmer members use universal clones including ICS 1, ICS 60, ICS 39, ICS 40, ICS 95, TSH 565 and TSH 812.

PACKAGING AND STORAGE


The cocoa beans are packed in 70 kg nett hessian bags.
Cocoa beans are best stored in a cool and dry warehouse, protected from direct sunlight.
Shelf life under proper storage conditions is at least 5 years.
